French, Saffron, Curcuma Macarons For Mac Attack 5!

type="html">

First I would like to wish you all a very happy Mother's Day!  Many countries of the world celebrate their own Mother's Day at different times throughout the year.  In UK, it is today, March 14, 2010 : the Mothering Sunday Date.  UK holds the prestige of being the first country in the world to celebrate that very special day.
I cannot describe Mother's Day as anything other than SPECIAL and I don't know why I always cry on this Day, which makes my heart feel like crying with sheer joy, delight but I still feel sad and blue because I miss so much my lovely mother who passed away in March, 1998.

Now, it's time to post for March Mactweets Challenge, hosted by Deeba of Passionate about baking
and Jamie of Life's a feast, and this month theme is: “Spring Fling:".  I love Spring so much, maybe because I was born on April.   I love the spring flowers, I mean really really love them.... When I think of spring, I become a yellow-orange Tulip.  Both colours yellow and orange attract me and make me feel cheerful, happy and energized, so I decided to make these saffron macarons.  As a filling, the kids chose white chocolate and marshmallow.  I’m submitting this post to MACTWEETS, a LOVELY BLOG devoted to MACARONS AND ONLY MACARONS.  Please check it out! The round up will be posted on the 20th of March.  It falls on the "Jour du Macaron / Fête de printemps".

For recipe, I always use my usual recipe adapted from La cuisine de Mercotte, the Queen of French Macarons!.

French Chocolate and Almond Macarons / Macarons Français aux Chocolat et Amandes/Mac Attack #18

type="html">

My love for chocolate gets me back to Mactweet attack! I really heart chocolate and my favourite is Dark Chocolate with Almonds! And who doesn’t love the combination of chocolate and almonds?  I think chocolate is one of the most mysterious sweets and so many questions were raised about the industry of chocolate, its consistency, texture, flavour, its secrets, etc.....  I served those macarons on Chocolate Dessert Cups with Strawberry and Moroccan Almond Briwat or Triangles! So delicious!
Recipe, adapted from David Lebovitz's superb recipe PLEASE CLICK HERE! .. .

And this is Moroccan Almond Briwat or Triangle.  It is stuffed with ground almonds mixed with some special spices, DELICIOUS!
This month's challenge at Mac attack is "DECADENTLY CHOCOLATE!"
All you need is love.
But a little chocolate now and then doesn't hurt.

So as part of the Mactweets challenge that Deeba and Jamie are hosting, I made these macarons.  I’m submitting this post to MACTWEETS, a LOVELY BLOG devoted to MACARONS. Please check it out! The round up will be posted on the 1st of May on Mactweets Blog !

Violet and Mint French Macarons / Macarons Français Violets et à la Menthe

type="html">
I should have posted these a long time ago. I made those mint-violet macarons quite a few weeks ago, but I haven't had the time to post them. Whenever I decide to make macarons, I always seem to make them after 8h00 pm or when it's raining or worst, on a hot humid day. When I decide to make macarons, nothing could change my mind.  So I decided to make these treats, so be it.
This particular Spring, for some reasons, has been more humid than any I can recall. So I was patient, waiting to pick the least humid day, but all days were almost the same, either humid or very humid, so I chose a humid day which resulted in egg whites that were super-aged because I had to wait extra couple of days to make these macarons. So I added more cream of tartar as usual to my meringue to make me feel more confident and to give the batter more stability.

 For Violet Macarons, I added some grape-violet food colouring and for Mint Macarons, I used holly green food colouring and a pinch of ground dried mint leaves for extra boost of freshnes.  I particularly enjoyed these mint macarons, the flavour combination of chocolate and mint reminded me of Thorntons‘ Mint Chocolate Bars, so yummy!  As a filling, I used chocolate ganache, and the macarons themselves had developped a creamy, jelly-like texture that fused with the chocolate ganache in the center.

For recipe, I always use my usual recipe adapted from La cuisine de Mercotte, the Queen of French Macarons.....

European Macarons /Macarons Européens

type="html">
The first time I tasted macaroons, I was in USA.  They are very delicious cookies, known as American coconut macaroon.  Then a few years ago, I went to France, it was my first trip to Paris.  Wowww, I still remember all those oh-la-la-so-French, exceptionally delicate almond meringue sandwich cookies in many Patisseries windows. I literally gasped when I saw those incredible macarons and I couldn't resist them! So creative, stunning and fashionable. Everything about them sounded perfect : the colour, taste, flavour, filling, etc ........
I seemed to have bought everything they have in those Patisserie. I started to buy a tin of macarons from here and from there. The pistachio macarons were delicious, I loved their taste and colour, but I will never forget those red-chocolate chili macarons! How could I?

Later back home, an Italian friend told me that in fact, they are ITALIAN MACARONS!  Well, since I know nothing about European Food History, I will call them EUROPEAN MACARONS to please both our European Neighbours.

Last week, the "Défi culinaire du mois de novembre 2009" was hosted by Nadia73 of Thé à la menthe du Maroc: http://thealamenthedumaroc.over-blog.fr/.   We were given one month to make perfect macarons. Everyone at  Cuisine entre nous femmes  is hooked on "MACARONS". All members agreed to focus on those lovely almond bites during the whole month of November of this year, and there is still a lot of discussion going on about MACARONS: the how, the why, etc...

For recipe, I always use my usual recipe adapted from La cuisine de Mercotte, the Queen of French Macarons!.
